One reason for having course-provided ingredients is that some ingredients are difficult to find either locally or online, e.g. First Clear Flour. A second reason is that bulk buying is way cheaper. Consider the High Gluten flour used for bagels. Amazon sells the King Arthur Baking Sir Lancelot Flour for $68.95 for a 50 pound bag delivered. The local JAR Bakery supply store sell the same bag for $28.72, If you were short of storage space for a 50 pound bag, you could give away half of the bag and still come out well ahead buying locally from JAR. In class we will fill large ziplock bags with 5 pounds of rye, 5 pounds of First Clear, and 5 pounds of High Gluten flours. There are similar savings on the other course-provided ingredients.

Below is a photo of an order waiting to be loaded into my car’s trunk. The vendor is the Bakers Authority in Queens, New York City. I bought three bags of the Ardent Powerfull Clear because the shipping costs more than the flour and I was in New York City anyway. Everyone else picking up products that day was driving a semi. The worker very kindly loaded the six bags of flour in my trunk. The other three bags of flour were rye and high gluten for bagels. The Bakers Authority has been in business since 1917. The website says “No order is too big or too small; we cater to all with equal care.”
